Oizumi-san's Tamaryokucha is steam 'fixed' and drum dried to form the characteristic curls. Though not certified, he relies on the balance of nature and a natural compost of seed meal and hay to grow premium organic tea.
Tamaryokucha Sora is an ideal tea for those new to Japanese green teas or for tea lovers who prefer a nuttier, less grassy taste. The soft mouth feel accompanies a red berry sweetness and steamed spinach taste. The light astringency balances pleasantly with a delicate umami aspect. The finish is persistently sweet and cooling.
The rugged coastal mountains of the Kumano district offer ideal tea cultivation conditions, far from the polluted air of developed urban areas. Fresh sea winds promote healthy growth while the cool nights, contrasting with strong sunny days, stress the plants and develop complexitiy of character.
