Oizumi-san makes only one sencha, crafted using his choicest leaf material, so anything that doesn't make that cut is lightly roasted to be become Jyō, or superior, Hojicha. High floral and sweet stone fruit notes balance ideally with a roasted nut/grain aroma. The subtle finish is refreshingly sweet. This hojicha contains a much higher leaf to stem ratio than ordinary hojicha, giving it a more complex taste profile and energetic chaqi.
The rugged coastal mountains of the Kumano district offer ideal tea cultivation conditions, far from the polluted air of developed urban areas. Fresh sea winds promote healthy growth while the cool nights, contrasting with strong sunny days, stress the plants and develop complexitiy of character. Though not certified, Oizumi-san relies on the balance of nature and natural composting to grow premium organic tea.

As with most of our teas, this tea can be steeped several times. Second infusions are usually made with slightly hotter water and about half the time. Third or fourth infusions require longer times of 90+ seconds. Please remember, these are guidelines to get you started and you may find your preference is to adjust them.
